He shared a simple, hearty and wallet-friendly version of a classic favourite: Cheat’s Chickpea Korma Curry.

It’s full of flavour, packed with veg, and kind to your bank account.

[Cheat’s] Chickpea Korma Curry

A healthier twist on a classic
Serves: 5
Cost per serve: $1.80

Ingredients:

800g–1kg frozen mixed vegetables

1 can chickpeas (rinsed and drained)

1 jar korma simmer sauce

2 cups cooked basmati rice

Method:

Sauté the frozen veg and chickpeas in a non-stick pan for 5 minutes.

Add the simmer sauce and ½ cup water. Simmer for 10 minutes until thickened.

Cook your rice as per the packet.

Serve and enjoy!
